Assistant Front Office Manager: Supervise and counsel front desk, PBX, bellstand, concierge and valet staff. Maintain a positive and cooperative work environment between staff and management. Coordinate the department's activities with other departments to facilitate increased levels of communication and guest satisfaction. 1808 Grille Sous Chef: Responsible for all aspects of managing the kitchen and kitchen personnel, ensuring the quality preparation of all menu items and proper handling / storage of all food items in accordance with standards. Coordinates the purchase of all food and develops menus, maintaining approved inventory, food costs and labor costs. 5 years experience in a similar position at a 4 star hotel or restaurant or 5 years experience as a Lead Cook. 1808 Grille Assistant Restaurant Manager: Oversee the operation of the restaurant, java bar and room service ensuring pro operate efficiently and profitably while maintaining an excellent reputation and high associate morale. Interview, select, train, supervise, counsel and coach restaurant staff for the efficient operation of the outlet. Schedule and direct staff in their work assignments. Beverage Manager: Work closely with Restaurant General Manager and Banquet Manager to ensure that beverage operations or efficient, meeting quality requirements and standards. Manage the financial aspects of beverage operation, ensuring the maximization of revenue with controlling costs. Supervise bar controls, shot glass use, red lining, empty bottles, liquor par list, monitoring of liquor requisitions. Create seasonal cocktails and update wine list. Schedules and coordinates wine tastings for staff and guests. Compile beverage orders based on pars and consumption and ensure all pars are maintained and revised when needed. Coordinate with purchasing agent to ensure the accurate delivery of beer, wine and liquor. Maintain and update beverage recipe book and wine descriptions.
